This crispy chorizo cod is rich and smoky in flavour and perfect for anyone who loves to eat fish or for that person who still needs a little bit of convincing (like I do). It’s so easy to make and can be made for quite a reasonable price too.
Anyone that knows me will know that I am not really a big fish eater. Other than tuna, I have never really been too bothered by it, I would much rather eat something else like chicken. However, since moving in with Ryan who loves to eat all different types of fish, I have tried to cook and eat it a little more. So far, we have had it at least once a week which is a massive improvement for me.
We have stuck with white fish or tuna steaks so far and I have actually really enjoyed eating it. It’s something different to eat during the week and healthy too. Of course, I have tried to experiment a little bit and have been testing out some different recipes and this one has been my favourite so far. This recipe is a little less healthy because of the chorizo, but it’s definitely worth it.
It only takes 10 minutes to prep and I made my crust early in the morning and let the fish set in the fridge while I was out and about running errands. Although the crust is really quick and easy to make, it definitely cut down my cooking time after getting home from a busy day. Once I had plated everything up I did have a sudden thought that maybe chorizo didn’t really go with fish (that might be because I never really eat fish so I have no idea what is good and what’s not lol). However, let’s just say I was so surprised at how well they went together and I would eat it all over again.
